The tide turns as more and more UK restaurants add New Forest Barramundi to the menu

From London's classic Bentley's to the beautiful Chewton Glen in Hampshire, more and more UK restaurants and hotels are waking up to quality, sustainable fish by adding New Forest Barramundi to their menu du jour.

New Forest Barramundi, a deliciously light, buttery white fish, has been described as having the eating qualities similar to zander, rainbow trout, and sea bass. It's sustainably farmed in the heart of the New Forest and is now available as an ethical and eco-friendly alternative to sea-caught and traditionally farmed fish.

New Forest Barramundi offers a conscience-free option for discerning diners looking for alternative fish. Baked, fried, added to a fish pie or grilled… it's deliciously versatile.

Brendan Fyldes, Head Chef at London's famous Bentley's Fish Restaurant, recently added New Forest Barramundi to his menu du jour. He believes that cooking New Forest Barramundi in a pan-Asian style will release the best of the flavours.

Ingredients
• 4 New Forest Barramundi fillets
• 1 large aubergine (or two smaller ones)
• 200g Soy Sauce
• 200g Mirin
• 50g of grated fresh ginger
• Olive oil

Cut the aubergine lengthways, then cut again into quarters or eighths. Steam them for 10 minutes. Meanwhile bring the soy sauce, mirin and ginger to the boil.

Put the steamed aubergines into a dish and cover with the boiling sauce. Cover with cling film for ten minutes and let it cool a little. While it's cooling, gently fry the New Forest Barramundi in a little olive oil and sea salt until it's a lovely golden brown colour on the fleshy side. Place the fish on the aubergine mix, and drizzle a little of the surplus sauce around the edge of the plate.
